Cherry Galette.

Sounds like a really fancy desert, but I can tell you it`s very easy to make. You can experement you fillings and even combine them. Just be brave!

Dough:

1 cup of  purpose flour

½ cup of unsalted butter (should be cold)

½ tsp salt

1 tbsp sugar

90 ml of water ( depends from the flour how much of water you`ll need, water should be cold)

Filling:

1 ½ cups of cherries

4 tbsp of sugar

1 ½ tbsp flour

1 tsp lemon juice

  • Sift the flour. Butter better to cut into squares and grind it with flour, sugar and salt. Sounds impossible, but you can do it.
  • While you are mixing all together, slowly add cold water, better to do it with tsp. You can need only 3-4, depends from humidity and flour. Dough shouldn`t be sticky, try to not over add the flour. Cover dough in plastic wrap and put in refrigerator min for 2 hours, better over the night.
  • Let`s make the filling. Remove pits from cherries, if you have fresh. Separate all liquid, you don`t need it) Add sugar, flour and lemon juice, mix everything.

  • Preheat the oven to 400′. Prepare a parchment lined baking sheet. On a lightly floured surface, roll out the galette dough, dough should be very thin. Transfer to a parchment lined baking sheet. Pile the cherry mixture in the center leaving a  border around the circle.

  • Fold the border towards the center, don’t be afraid to pull in tight, it will settle.

  • Bake the galette on the middle rack for 40-45 minutes until the edges are nice and gold.
